Strawberry Shortcake
From Simply in Season.
- 2 cups flour or whole wheat pastry flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
In a large bowl, mix together.
- 2 TBSP butter (chilled)
Cut in with pastry blender until crumbly.
- 1 cup plain yogurt
- 1 egg
Combine then add dry ingredients. Mix briefly. Pour into a greased 8 x 8-inch baking pan. Bake in preheated oven at 350F for 30 minutes; or drop by spoonfuls onto greased backing sheets and back in preheated oven at 400F fr 12 - 15 minutes. Serve warm with sliced strawberries and additional yogurt.
