Rhubarb Soda

2# rhubarb, cut into 2 inch pieces

1 cup water

1 cup sugar

juice of 1 lemon (optional)

chunks of fresh ginger (optional)

club soda or sparkling water


Begin by making a rhubarb syrup:

Heat the rhubarb, ginger and water in a sauce pan until soft (about 10 minutes). Strain through cheesecloth or a mesh strainer, discard rhubarb pulp.

Add sugar and lemon juice to the liquid and stir until sugar is disolved.

Mix 1 part rhubarb syrup to 3 parts sparkling water.  Serve over ice.

The syrup would be a delicious addition for summer cocktails!
