Oatmeal Rhubarb Pie

Ingredients

Crust

1 c flour

1/2 tsp salt

1/2 c sugar

1 c oats (uncooked)

1/2 c butter

Filling

3 c rhubarb

1/2 c sugar

1 tbsp flour

1/2 tsp cinnamon

1 tbsp water

Preheat oven to 350F. Grease a 9'' pie pan. For crust mix together flour, salt, sugar and oats. Add butter and cut it into the mixture until crumbles form. In a separate bowl mixed ingredients for the filling, put aside.

Press half of crumbly mixture onto the bottom and sides of the pan forming a pie crust. Pour in the filling, sprinkle the remaining oatmeal mixture over the fruit. Bake for about 45 min.

Please let us know how you like it! We have picked plenty of rhubarb this year and frozen it--so we will have it later in the season for all kinds of delectable eating.

Never tried rhubarb before and wasn't sure what to expeect. Luckily, A told my R that it gets really sweet; otherwise, she wouldn't have tried the pie at all.

It was the easiest recipe: mix flour and sugar, sprinkle some in bottom of pie, add chopped rhubarb and cover with remaining flour/sugar mixture. Bake! It came from allrecipes.com

It is so delicious, I may have to get some more. I didn't have quite the 4 cups needed for the recipe, so I added some frozen blueberries (from last year's picking) and thinly sliced one jonagold apple (unpeeled) over the top.
